Layers
You can use layers in Photoshop to chnage an image. Here for instance, is a colour photo turned balck and white, and then selectively coloured by "erasing" the black and white layer off the top of the colour one.

Great job here. I managed this one time by sheer fluke, did a bad job and probably never will do it again. Love the colours here.

I had to come back to this one. How did you get the cutout so neat?
magnetic lasso masque tool i would suppose??
Created a layer on top, desaturated it, then used the eraser and a small brush to bring the colours through :)
